If you're vegan/vegetarian there are a few mushroom sauces that can be subbed in for the oyster sauce as well.

I currently have the mushroom sauce in my fridge because I couldn't really taste the difference when I made it both ways but I do know the mushroom sauce has a lot less sodium so we went with that most recently. 

Also, oyster sauce on its own smells and tastes horrendous. It's pretty amazing that it turns into that delightful brown sauce when it's all said and done. Kinda like how you typically cant hear a Brits accent when they sing.

That brown sauce is more like a broth than a sauce for sure. More watery than thick.

unless you're out here on the west coast then for some reason they serve this gloopy brown sauce that's just nasty.  it's a similar taste but they put way too much cornstarch into it

I would be the wrong person to answer this question. I'm that guy who goes to the all you can eat china buffet and loads my plate up with french fries.

I mean.. it's unlimited french fries!

I ordered Chinese from our usual nearby place the other day and it was God awful. So many things were just bad about it. We've been thinking the quality of this place has been going down in recent years and this last order was the breaking point. Not ordering from there anymore. Gonna hunt for a better place. I know a better place but it's a little farther and they don't deliver to my house so we only go there if we wanna make the drive and make it a night out. Gotta find a better place for takeout/delivery though.

Maybe it's just the white sauce with some soy sauce in it that turns it brown?
